Artichokes with onion dip

A very quick and easy dip (not only) for artichokes. Contrary to what I have heard, artichokes thrive very well, at least in our area. The only important thing is to grow the plants in the fall and ideally put them out in December, as the young plants do not tolerate the dry heat well. This allows them to grow well in winter and form deep roots by summer. <p

Recipe:
Boil artichokes until the stalk is soft (approx. 20 minutes)

Dip:
1 onion
olive oil
balsamic vinegar
salt
pepper
Chop the onion and mix with the remaining ingredients. Leave to infuse for at least 2 hours.

Working time:
5 minutes with a vegetable chopper, a little longer without
